We try and eat healthy when we can. Most of us are of course are suckers for a hot French fry or a rich dark chocolate. Even the pace of life in the Bay Area anymore has us eating what we can when we can. It’s nice to stop every once in a while and try and find something to eat that is easy to make, yummy to the tummy, and good for us too. We recently saw a salad idea that did all three and we wanted to share it with you.

We are speaking of a simple kale and strawberry salad.  You can’t ask for much of anything simpler than slicing a handful of strawberries, mixing it in with some chopped kale leaves and perhaps throwing on some nuts or even some crumbled feta cheese for added flavor. Delicious and good for you. Plus it’s good for your eyes too.

Kale or leaf cabbage is a rich source of lutein and zeaxanthin, which are related to vitamin A and are believed to help reduce the risks of macular degeneration and cataracts. Kale is also one of the most nutrient-dense foods on the planet. Kale, however, has never been known for its wonderful taste. So we add strawberries. Strawberries contain a lot of vitamin C, which as an antioxidant can also help reduce your risk from cataracts. Strawberries also contain anthocyanins which can help reduce the risk of heart attacks.

So, a kale and strawberry salad is a great healthy and delicious treat we think you should add to your menu, especially as we all work towards the coming swimsuit season.
